Acacia honey is a type of monofloral honey, produced by bees that live near the acacia plants and draw exclusively from them. At sight it appears light yellow, clear and with of a liquid consistency. It has a very slow crystallization rate and can remain in the liquid state for a very long time, thanks to its high concentration of fructose and not glucose.
The taste is obviously sweet, with a slightly bitter aftertaste, almost imperceptible. Aroma and flavor of flowers and vanilla are really delicate and completely characteristic.
